Salsa Chicken and Field Greens

Once again I look at the clock and can’t figure out what to make for dinner. The rest of the family wanted soup. I just was not in a soup mood. Wait! I think I have… yes! I do all the ingredients for my old standby Salsa Chicken and Field Greens.


  • Left over chicken pieces
  • Salsa
  • Corn (not needed)
  • Shredded Colby or taco seasoned cheese
  • Tortilla chips (5-6)
  • Field greens

Take any leftover chicken or a handful of one of those shortcut pieces of  chicken that you get from the store.
Cut up and place in a microwave safe bowl. Add the corn and enough salsa to make everything wet.

Stir and pop into the microwave until it just past warm. Carefully pull out and pour over a bed of greens and crumbled tortilla chips. Add a small handful of shredded cheese on top quickly so it melts a little.

Grab a fork and eat!
